Sauvignon Blanc had been traditionally grown in centre Loire, over what is now 7 appellations. Pouilly-Fumé is argubly the purest of them all, the entire AOC is dedicated to Sauvignon Blanc alone, with the exception of a tiny plot of Chasselas, under Pouilly-sur-Loire AOC.
Pascal Jolivet’s plot selection is entirely from its estate owned vineyards, 100% clay-limestone. Commonly known as “Terres Blanches”, which is the name given to the Kimmeridgian marls, near the Village of Boisgibault.
The harvest had been done manually. All vineyards are sitting on southern slopes. Each grape is sorted upon receipt of the harvest, then the juice is both transported by gravity in order to respect the natural circuit of winemaking. For its extraction, only one light press is involved, everything apart from the cuvée are left in the press. Natural vinification in thermoregulated stainless steel vats and ageing for 8 months on fine lees.
Unlike many other Sauvignon Blanc, Pascal Jolivet Pouilly-Fumé can benefit through medium length bottle ageing. The wine will improve for several years after its bottling. Expect new bouquets such as nuttiness and dried flowers if aged carefully.
