Château Roubine is one of 18 original Provence Grand Cru Classé producers, acknowledged in 1955. It represents some best craft of winemaking in Provence. Its vineyards are bordered by a circus of pine and oaks, located in one piece in the heart of the Var between Verdon and the Mediterranean, offers by the great diversity of its thirteen grape varieties. The property occupies total of 130 hectares, including 72 hectares of vines, and excels by an optimal association between state-of-the-art technology and the scrupulous application of the rules of rational agriculture.
The thirteen grape varieties planted in Château Roubine vineyards include both red and white wine varieties. The red ones are: Cinsault, Cabernet Sauvignon, Mourvèdre, Syrah, Tibouren, Carignan, Merlot. The white ones are: Chardonnay, Rolle, Ugni Blanc, Semillon, Clairette, Marsanne.
For this wine, Cru Classé Côtes de Provence AOC, six red wines varities are used: Cinsault, Grenache, Tibouren, Syrah, Mourvèdre, Rolle. Through selective harvest, the grapes are directly pressed in chilled temperature. And fermented in stainless steel to create a beautiful aromatic wine of the unique style of Côtes de Provence. The wine is predominately on the nose with loose bouquet of small red fruits, comes from the influence of Tibouren, Cinsault and Grenache. Then on the palate, sublimated by exotic notes brought mainly by the Mourvèdres.
For the locals in Provence. A rosé wine like this will marry perfectly with a dish of red mullet seasoned with garlic butter. Alternatively if you go closer to Italian style, woule work with a risotto of morels.
