Château Aydie is owned by four generations of Laplace Family in South-west France since 1927. The wine, Château Aydie “L’Origine” Madiran AOC is a robust red wine made from Tannat and Cabernet Sauvignon.
The vines for grapes of this wine are situated on a clay and limestone terroir. This combination grants the wine both great structure and richness in fruity flavours. For the particular Cuvée, 70% Tannat is used, alongside with 30% Cabernet Sauvignon.
Once the fruits are harvested, they are pressed separately before vinification. Separate vinification are also applied for each plot and grape variety, with fermentation at a temperature of 25°C. Extraction methods involve both racking and pumping over. The duration of maceration ranges from 10 to 20 days depending on the grape variety.
After the vinification process, 80% of the wine undergoes aging in tanks, while the remaining 20% is aged in oak barrels for a duration of 12 months.
Consider the grape varietal profile of the wine, it’s nothing short of a full body wine. After a few years of careful bottle ageing, the wine shows a clear, brilliant, deep red color. Complex on the nose, offering a blend of fruit notes such as blackberry and cherry, delicate floral nuances of violet, and subtle spices like pepper and vanilla. Despite it’s quite overwhelming on the wine’s body, it’s also surprisingly pleasant on the palate, it unveils smooth tannins, with a wonderfully fruity finish. This wine embodies richness and fullness.
