Traditional Prosecco sparkling wine, made in entirely dry style. This particular wine had all its fruits sourced from Rai di San Polo di Piave, which is within the legal limit of Treviso zone. They translate into the regulations on the label.
The vineyards plant monoculture of Glera Lunga, trimmed in fashion of double Sylvoz overturned. This sort of vine training allows decent air circulation in the vineyard while maintaining reasonable volume of production. Roughly per hectare, there are 2800 vines. Under vines are mostly clay and sandy soil, sometimes there are alluvial gravels. The vineyards are situated on the Po river floodplain, elevation mostly only 30 meters above sea level.
Each year, the harvests happen around mid-September. Per hectare of harvest can yield around 120 hL of must. The wine had been fermented dry through Charmat method, happen entirely in pressurized tanks. Malolactic fermentation had been prevented. The wine sat on the lees for 30 days before bottling. No extra ageing, to maintain its freshness.
