Digby, one of England’s premier sparkling wine houses. Known for breaking traditional conventions in English viticulture. The house mostly source exceptional grapes across top vineyards in Southern England. The production started in 2013, using wines traces back to 2009 vintage.

The house blend is made by the following grape varieties: 40% Pinot Noir, 25% Chardonnay, 25% Pinot Meunier.

Since the house trades in form of Negociant, it sources fruits from various regions, including: Kent, Sussex, Hampshire, Dorset.This geographic spread protects production against localized frost or poor weather while giving the blending team diverse base wines with varying acidity, ripeness, and aromatics.

These regions also cover a wide varieties of terroirs and soil types. Such as Chalk, found along the South Downs seam. Provides the classic linear structure, bright acidity, and minerality associated with premier sparkling sites.  Greensand (Sandstone), a distinct English soil feature that Clough favors for Chardonnay. It imparts energy, depth, and rich savory/umami complexity. And clay, heavier clay soils provide body, mid-palate weight, and punchy fruit expression, particularly for Pinot Noir.

Serve the sparkling wine in Champagne flutes. Chill to 5℃ before serving. Usually matches best with oyster or delicate seafood.
